Explanation
PRPs create an environment in which safe food can be made. Think of personal hygiene, cleaning and disinfection programmes, maintenance of premises and equipment, pest control, waste management, separation of clean and unclean zones, staff training and supplier management.
In practice you describe for each topic what you agree, who carries it out and how you check, with records such as cleaning lists, inspections and training evidence. If the basic conditions are not in order, a HACCP plan cannot work well, because you would constantly have to correct problems that lie in the basics.
Distinguish PRP, OPRP and CCP. PRPs are general, OPRPs are targeted measures for a specific hazard, and CCPs are the points with a critical limit and direct monitoring. Which terminology and division you use depends on the scheme you work with. Keep it understandable for those who carry out the measures.
Example from practice
A bakery sets fixed arrangements for cleaning, pest control, hand hygiene and machine maintenance, each with a checklist and an owner. Together those arrangements form the PRPs.
